Garlic Herb Chicken Patties w/ Watermelon Salad

2 cups Kale, 1/2 Chicken Breast (diced or shredded), 1/4c Chickpeas, 1/4 Apple (diced), 1/4c Quinoa, 1/4 Avocado

Dressing: 1TBSP Olive Oil, 1TBSP lemon juice, 1TSP Stevia     Servings: 1

Garlic Herb Chicken Patties w/ Watermelon Salad

1lb ground chicken, 1TSP chopped parsley, 1/2 TSP salt, 1/4TSP cayenne pepper, 1/2 TSP chili pepper flakes, 2TBSP minced garlic: Combine ingredients and form into patties. Cook until done.

2c Arugula, 1/2c diced watermelon, 1/2c diced cucumber, red onion, 3TBSP mint leaves: Toss with dressing

Dressing: 1TBSP olive oil, 1TBSP red wine vinegar, lemon juice and salt    Serves: 4

Salmon w/ Mango Salsa, Tri Color Carrots and Brown Rice

4 Salmon Filets seasoned with salt and pepper. Cook on grill or brown in skillet until done. 

Toss carrots with olive oil, salt and pepper. Roast in 400 degree oven for 20min or until done. 

Mango Salsa: 1 Mango diced, 1/4c chopped cilantro, red onion, 1TBSP lime juice

Serve with brown rice     Serves: 4

Shrimp Burger w/ Broccoli Slaw and Quinoa/Brown Rice Mix

Salmon w/ Mango Salsa, Tri Color Carrots and Brown Rice

4 Salmon Filets seasoned with salt and pepper. Cook on grill or skillet until done. Combine 1 head of Cauliflower cut into pieces, 2TBSP olive oil, 3TBSP minced garlic, 1/2TBSP garlic salt, 1/4TSP paprika. Roast in 350 degree oven for 15 min or this is great in the air fryer! Serve with Kale and Quinoa   

 Serves: 4

Shrimp Burger w/ Broccoli Slaw and Quinoa/Brown Rice Mix

1/2c chicken breast, broiled and shredded, 1/2c cooked lentil pasta, 1c baby spinach, 1c spiralized zucchini (optional). Cook pasta. Combine in skillet with chicken, zucchini and spinach. Cook until heated. Toss with 1TBSP lemon juice, 1/8TSP salt and 1TBSP capers.    Serves: 1

4 Trader Joes' Shrimp and Seafood Burgers cooked until done. 

Broccoli Slaw: 2c broccoli slaw tossed with 1TBSP olive oil, 1TBSP lemon juice, 1TSP stevia. 

Serve with leftover Mango Salsa and quinoa/brown rice mix    Serves: 4

Fill blender with ice, 1c almond milk, vanilla protein powder of choice, 1/2 frozen tropical fruit, 1/2 banana. Blend and enjoy!    Serves: 1

1 14oz can white beans, 1 clove garlic, juice of 1/2 lemon, 1/8TSP salt, 1/8TSP pepper, 2-3TBSP olive oil. Combine everything except olive oil in blender or food processer. Pulse a few times. Slowly add in oil. Blending until smooth. 

Serve with cauliflower tortilla chips
